Mushroom Risotto with Truffle Oil
This creamy and decadent mushroom risotto is a perfect dish for any special occasion or a cozy dinner at home. The earthy flavors of sautéed mushrooms are paired with a rich, creamy risotto, and a drizzle of luxurious truffle oil adds the finishing touch of elegance.
Ingredients:
- 1 cup Arborio rice
- 2 cups vegetable or chicken broth
- 1 cup white wine
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cups mixed mushrooms (e.g., cremini, shiitake, and oyster), sliced
- 2 cloves garlic, minced
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons butter
- 1 tablespoon truffle oil (more for drizzling)
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- Prepare the Broth:
- In a small saucepan, heat the broth over low heat. Keep it warm throughout the cooking process.
- Cook the Mushrooms:
- In a large pan, heat the olive oil over medium heat. Add the mushrooms and cook until they release their moisture and become golden brown (about 5-7 minutes). Add the minced garlic and cook for another 1-2 minutes. Season with salt and pepper, then remove from the pan and set aside.
- Cook the Risotto:
- In the same pan, melt the butter. Add the chopped onion and cook until softened, about 3 minutes.
- Add the Arborio rice and stir to coat the rice with the butter and onion mixture. Toast the rice for 1-2 minutes until it becomes slightly translucent around the edges.
- Pour in the white wine and cook until it is mostly absorbed by the rice.
- Add the Broth:
- Begin adding the warm broth, one ladle at a time, stirring constantly. Allow each ladle of broth to be absorbed before adding the next. Continue this process for about 20-25 minutes, until the rice is tender and creamy.
- Finish the Risotto:
- Once the rice is cooked, stir in the cooked mushrooms, Parmesan cheese, and truffle oil. Taste and adjust the seasoning with more salt and pepper if needed.
